Acipenser gueldenstaedtii is a critically endangered species, present in the IUCN red list. It is cultured for restocking, food (fish flesh), and for caviar. Many aspects of its biology remain unknown, namely aggregation patterns, aggression, and stress responses. In addition, many aspects of its production are not available, such as densities, slaughter protocols, and malformation rates.
